Responsible for the administration, operation and coordination of Hygiene and safety related matters
Responsible for guiding the Department Heads in the implementation and Maintenance of the established H.A.C.C.P. standards in accordance to Hotel policies
Responsible for ensuring total compliance with Local legislation in terms of Health, Safety and Hygiene.
Responsible for establishing and maintaining high sanitation standards in all food preparation areas
To set standards for all products in line with company policies.
Responsible to certify all members of staff that require basic food handling training.
Establishes and implements all the H.A.C.C.P. policies in the all the kitchen and stewarding areas
To facilitate and formulate action plans for BQT functions, Outside Catering and internal special projects
Monitors all food Deliveries, for H.A.C.C.P. compliance.
To ensure RAK Municipality Food Control Section Regulations are adhered to in detail.
Ensure that all operational equipment is used to its appropriate function and well maintained
Report all defects of equipment to the Engineering department
Ensure that all municipalities related training programmes are carried out and that the hotels adhere to training percentages set by municipality. i.e. food hygiene, first aid etc.
Verify HACCP system and ensure all relevant records are maintained.
Responsible for the communication related to food safety between Purchasing, Receiving, Stores, Kitchen, Stewarding, Service, Engineering, Housekeeping, Human Resources, Executive Chef, EAM and General Manager.
Ensure food safety practices reflect written procedures.
Conduct a monthly back of house food safety inspection to ensure RAK Municipality regulations, In house HACCP & food safety policies & procedures are being adhered to and observations recorded and distributed to all relevant departments involved and follow up on all non-conformities highlighted to ensure action is taken in a timely and efficient manner.
Attend RAK Municipality meetings/trainings in relation to kitchen standards or hygiene requirements and report findings.
Support the Purchasing department to conduct Supplier site inspections and report writing.
Circulate the RAK Municipality Inspection report to the relevant departments and ensure that non conformities are addressed and rectified.
Schedule, conduct internal audits along with HACCP team members and provides regular internal audit reports.
Prepare and manages documentation and records relating to HACCP/FSMS procedures.
Assist department heads in preparing food safety related standard operating procedures.
Review completion of monitoring activities.
Verify key critical control points for compliance with critical limits.
Monitor and reports on the effectiveness of HACCP/Food Safety Plan implementation.
Reports to management on issues relating to food safety, quality and legal compliance.
Monitors the biological testing program for food contact surfaces, staff, bought-in product and finished product and verify reports.
To conduct investigation on Food safety related guest complaints.
To conduct mock traceability/recall.
Responsible for the trainings related to hygiene to food handlers.
Liaise with Regulatory Authorities and external Auditing organizations.
To be updated about new legal requirements and notices issued by RAK Municipality from time to time and ensure amendment of necessary practices and procedures.
Maintain Food Handlers declaration Records.
Maintain the original Food Handlers occupational Health Cards.
Ensure that all food handlers are scheduled for Occupational Health Card and renew it timely.
